<p>Gazpacho’s roots stretch all the way back to the Roman Empire, but it really took off in Spain’s sunny Andalusia region by the 1600s. Over the centuries, this chilled soup has evolved into countless delicious variations &#8211; some smooth, some chunky, and even some that skip the classic ingredients entirely! But no matter how you make it, gazpacho always delivers fresh, vibrant flavor. </p>



<h2 class="wp-block-heading">Easy Gazpacho Ingredients</h2>

<p>Here’s all you need to make this recipe, all of which should be available at your local grocery store:</p>



<ul class="wp-block-list">
<li><strong>Bread</strong> &#8211; Adds body and classic texture. Use gluten-free bread or omit it for a lighter version. </li>



<li><strong><a href="https://amzn.to/46UGVZc" target="_blank" rel="sponsored noreferrer noopener nofollow">Red wine vinegar</a></strong> &#8211; For bright tanginess. Sherry vinegar or fresh lemon juice will also work.</li>



<li><strong><a href="https://amzn.to/41GUqIr" target="_blank" rel="sponsored noreferrer noopener nofollow">Canned Italian-style tomatoes</a></strong> &#8211; These tomatoes are pre-seasoned with herbs for extra flavor. You can substitute plain canned diced tomatoes and add a pinch of dried oregano or basil. Or, during fresh tomato season, substitute peeled fresh tomatoes, such as Roma tomatoes or cherry tomatoes. Blanch the ripe tomatoes first for easy peeling.</li>



<li><strong>Green bell pepper</strong> &#8211; For a fresh, crisp bite. Red or yellow bell pepper would be great for a slightly sweeter flavor.</li>



<li><strong>Onion</strong> &#8211; White or yellow onion will work; I prefer the latter. Shallots are great for a milder taste.</li>



<li><strong>Large cucumber</strong> &#8211; Peeled and seeded for smooth texture. English cucumbers, Persian cucumbers, or Kirby cucumbers are often used in gazpacho recipes; I use the more common form found in major grocery stores in the U.S. Keep more aside for garnish.</li>



<li><strong>Water</strong> &#8211; Adjust for the desired consistency. </li>



<li><strong>Extra virgin olive oil</strong> &#8211; For silky richness. Avocado oil is a good substitute for a neutral taste. </li>



<li><strong>Garlic </strong>&#8211; For added depth of flavor. Fresh garlic is always best!</li>



<li><strong>Tabasco sauce</strong> &#8211; Provides gentle heat to this dish. Use cayenne pepper or smoked paprika instead, if you prefer.</li>



<li><strong>Kosher salt &amp; fresh ground pepper</strong> &#8211; To taste. </li>

<p>Refrigerate the blended soup for at least 1 hour to allow flavors to meld together. Once chilled, season the soup with additional salt and/or Tabasco as needed. Serve the Gazpacho cold, garnished with fresh chopped cucumber.<br></p>

<li><strong>Don&#8217;t skip the chilling</strong>. It&#8217;s important to chill this homemade gazpacho soup for at least 1 hour, preferably longer (or even overnight) to let flavors deepen.</li>



<li><strong>Preferred texture</strong>. Blend this delicious cold soup until smooth or pulse for a chunkier style. (Personally, I prefer a smoother texture.)</li>



<li><strong>Adjust consistency</strong>. While I think the thickness of this cold tomato soup is perfect, you can thin it with water or extra tomato juice. Likewise, you can thicken the soup with extra bread or oil, as needed.</li>



<li><strong>Additional herbaceous flavor</strong>. Add in fresh herbs, such as fresh basil or oregano, for a stronger herb-forward flavor.</li>



<li><strong>Stale bread</strong>. To stay true to the soup&#8217;s traditional roots as a dish designed in part to use up leftover bread, use stale bread!</li>

<p>This Carrot Vichyssoise recipe is another fabulous find from the Gordon Ranch recipe box. It’s my kind of recipe – easy to prepare with pantry ingredients. In fact, virtually all the recipes I’ve made from the Ranch recipe box fall into that category – and many of them are posted elsewhere on this site! The Gordon Ranch is owned by good friends, and my family spent a week or two on the ranch every summer, beginning when I was around 2 years old. I have fond memories of many fun activities on the ranch, including enjoying delicious meals. Dinner often started with some sort of soup as the first course.</p>

<p>I have loved vichyssoise since I was a little girl, enjoying it both at the ranch as well as our country club. It’s basically a leek, potato and cream-based puréed soup that is velvety smooth. To make traditional vichyssoise, root vegetables (potatoes, leeks, onions) are all cooked together in a flavorful chicken stock. One of the cooks at the ranch came up with the idea to add in carrots. Brilliant! Carrots not only add color, they layer in more earthy flavor with a touch of sweetness. After cooking, the vegetables and broth are puréed and traditionally combined with cream and butter. The ranch recipe cuts the heaviness of the cream by using half and half and milk instead of whipping cream. Yum!</p>

<li id="instruction-step-1">In a large saucepan, bring water to a boil.</li>
<li id="instruction-step-2">Stir in chicken bouillon. Stir in carrots, potatoes, leeks and 1 teaspoon salt. Bring back to a boil, cover, reduce heat and simmer until vegetables are very tender, around 35 minutes.</li>
<li id="instruction-step-3">Remove from heat, uncover and set aside to cool.</li>
<li id="instruction-step-4">Purée with an immersion blender until smooth (or purée in a standing blender, half at a time, then return to saucepan).</li>
<li id="instruction-step-5">Stir in melted butter, half and half, milk and Tabasco. Add salt and/or Tabasco as needed (I usually don’t add anything.) Cover and chill for at least 2 hours, preferably longer.</li>
<li id="instruction-step-6">If needed, whisk soup just before serving. Serve cold; garnish servings with chopped carrot fronds or fresh parsley.</li>

<h2 class="wp-block-heading">You will Love Vichyssoise Soup</h2>



<p><strong>This Cucumber Leek Vichyssoise is a classic soup with a twist. </strong>Vichyssoise (see definition below) is a chilled soup traditionally made with leeks, potatoes and cream, and served cold with a garnish of chives or other herbs. In this recipe, <strong>I add the refreshing flavors of cucumber and lemon juice to the mix, along with baby spinach, garlic and onion. These additions add depth to the combined soup’s flavor </strong>&#8211; garlic adds a bit of a bite, baby spinach earthiness and color, and fresh lemon juice brightens everything up. Finally, a garnish of thinly sliced radishes adds contrasting color and a bit of crunch!</p>

<h2 class="wp-block-heading">What is Vichyssoise?</h2>



<p><strong>Vichyssoise is a leek, potato and cream-based puréed soup that is velvety smooth and served chilled. </strong>Growing up, I loved the version served at the country club where my family belonged (it’s still on the menu today!). Since Vichyssoise is served cold, adding cold cucumber seemed a natural fit. </p>

<h3 class="wp-block-heading">What does Vichyssoise mean in French?</h3>



<p>Surprisingly, vichyssoise is not a French word. This chilled soup was created in 1917 by the head chef at the Ritz Carton in New York, and he named it after the French town of Vichy, which was near his home town.</p>

<h2 class="wp-block-heading">Cucumber Leek Vichyssoise Ingredients</h2>

<p>As mentioned above, in creating this recipe <strong>I started with the ingredients in a traditional Vichyssoise:</strong></p>

<li>Milk or cream (I use half and half)</li>

<h2 class="wp-block-heading">How to make Vichyssoise Soup</h2>

<p>Here are the steps to follow in making this delectable soup:</p>



<ol class="wp-block-list">
<li><strong>Prep ingredients.</strong><br>Chop the garlic, onion, leeks and spinach. Peel, seed and chop the cucumber (see Tip below) and peel and chop the potato.</li>



<li><strong>Cook garlic, onion and leeks.</strong><br>In a large skillet or sauté pan, melt butter over medium-low heat. Add garlic (or shallots), onion and leeks. Cook, stirring frequently, about 5 to 7 minutes or until soft and the leeks are just beginning to turn brown. Remove from heat and set aside.</li>



<li><strong>Cook cucumber, spinach and potato.</strong><br>In a large saucepan, bring chicken stock and salt to a boil over medium-high heat. Add cucumber, spinach and potato. Cover, reduce heat to low, and simmer about 10 to 15 minutes or until potatoes are tender. Remove from heat, uncover and cool for 15 minutes.</li>



<li><strong>Combine leek, cream and cucumber mixtures.</strong><br>Stir leek mixture and half and half into cucumber mixture. Purée with an immersion blender or transfer to a blender in 2 batches and purée until smooth.</li>



<li><strong>Add lemon juice and seasoning.</strong><br>Season to taste with lemon juice, salt and ground white pepper.</li>



<li><strong>Chill.</strong><br>Cover and chill soup for at least 2 hours, up to 3 days.</li>



<li><strong>Serve.</strong><br>Taste soup and adjust seasonings as needed. Serve cold; garnish servings with thinly sliced radishes and chopped chives.</li>

<h2 class="wp-block-heading">Storing Cold Leek Soup</h2>



<p>Once the soup is prepared, put it in a large sealed container in the refrigerator to chill. Store any leftovers the same way. It will keep for 3 to 4 days.</p>

Russets are higher in starch and therefore break down easier and help thicken the soup. I don’t think you get the right texture with a lower starch potato, like a Yukon Gold or Red.</p> </div> <div class="schema-faq-section" id="faq-question-1676418023753"><strong class="schema-faq-question">What is the difference between vichyssoise and potato leek soup?</strong> <p class="schema-faq-answer"><br/>The main difference is that vichyssoise is served cold, and potato leek soup is served hot. Vichyssoise always calls for milk or cream, and it’s optional in potato leek soup.</p> </div> <div class="schema-faq-section" id="faq-question-1677535436608"><strong class="schema-faq-question">What&#8217;s the difference between vichyssoise and gazpacho?</strong> <p class="schema-faq-answer">Vichyssoise and Gazpacho are both chilled soups, but they are quite different in terms of their origin, ingredients, and flavor profiles. Vichyssoise is a puréed soup that is traditionally made with pureed leeks, potatoes and cream, and has a smooth, creamy texture. On the other hand, <a href="https://www.seasonedkitchen.com/easy-recipe-for-gazpacho">Gazpacho</a> is a Spanish soup that is typically made with tomatoes, cucumbers, onions, peppers, olive oil, vinegar and bread. <li id="instruction-step-1">In a large skillet or sauté pan, melt butter over medium-low heat. Add garlic (or shallots), onion and leeks. Cook, stirring frequently, about 5 to 7 minutes or until soft and the leeks are just beginning to turn brown. Remove from heat. Set aside.</li>
<li id="instruction-step-2">In a large saucepan, bring chicken stock and salt to a boil over medium-high heat. Add cucumber, spinach and potato. Cover, reduce heat to low, and simmer about 10 to 15 minutes or until potatoes are tender. Remove from heat, uncover and cool for 15 minutes.</li>
<li id="instruction-step-3">Stir in leek mixture and half and half. Purée with an immersion blender or transfer to a blender in 2 batches and purée until smooth. Season to taste with lemon juice, salt and ground white pepper.</li>
<li id="instruction-step-4">Cover and chill for several hours. Adjust seasonings, as needed. Serve cold; garnish servings with thinly sliced radishes and chopped chives.</li>

<p>This Chilled Tomato Dill Soup recipe is always a hit, especially on a hot summer night. It is bursting with the flavors of summer &#8211; fresh tomatoes, onions and garlic. Fresh dill leaves, light and flavorful, blend perfectly with the tomato flavor and add bits of green color to this salmon-colored soup. I like to take it as part of a picnic dinner for a Denver Botanic Gardens summer concert, along with one of our main dish salads and a French baguette. It is rich, so small portions are best.</p>
