In reply to Lucy R. Over the years, four or five people have told me they've seen versions of this recipe in various cookbooks. One of those books was even published in the 1940's! Mom's recipe was written on a scrap of paper, so chances are she tasted these yummy croustades at a friend's home, who then shared their version with her.

Give credit where credit is due. This recipe is straight out of the Best of Bridge cookbook “Grand Slam”, and yes they are delicious!

These are a huge hit at any party. I served them at Thanksgiving this year and three people asked for the recipe. I replace the 3 TBS of finely chopped onion with the same amount of shallots or finely chopped green onion and add chives at the end where the recipe calls for finely chopped green onion.
