					<description><![CDATA[I made this super delicious soup today!  It is a recipe treasure for simplicity to put together with an authentic and robust texture and taste that doesn&#039;t disappoint.  While I heard of hominy, I never tasted it before today.  It is not a common item used here in Canada.  Was fortunate to locate it in a local store.  I made the recipe exactly as written. Added 1 Tbsp of chicken &#039;better than bouillon&#039; stock when pureeing half the hominy to ramp up the flavour a bit.  Also used Green Giant canned corn niblets (12 oz) in lieu of fresh/frozen corn called for as I didn&#039;t have it on hand.  Also added one can of Rotel (original) finely chopped tomatoes/green chilies as suggested by another reader.  The soup is thick and so very good.  Served with mini naan dippers (flatbread - made with buttermilk and ghee) toasted with melted Habanero Jack cheese to soak up the delicious broth this soup has.  Am thinking that next time I may add some chopped fresh okra to add something unique and different that would go with the southwestern soup theme. Many thanx again for this keeper recipe!  To others, make this recipe it is delicious and so worth making.]]></description>
